A banana cake recipe is a very famous dessert all over the world. Inspired by this traditional dessert originated the banana split cake recipe with banana and chocolate frosting that is not only very easy to prepare, but also an absolutely delicious dessert for dinner parties.
What you will need for the banana frosting:
500 grams of unsalted butter
5 large egg whites
1 1/2 cups of sugar
1/2 cup of mashed ripe bananas
1/2 teaspoon of salt
1 1/2 tablespoons of vanilla extract
5-8 drops of food coloring
Chocolate frosting:
1 cup of semi-sweet chocolate chips
1/2 cup of caramel sauce
2 tablespoons of butter
1 1/4 cups of confectioner's sugar
1 teaspoon of vanilla extract
For the banana cake:
70 grams of butter
1 1/2 cups of sugar
1/2 cup of confectioner's sugar
4 large eggs
2 1/2 cups of cake flour
1 teaspoon of baking soda
3/4 teaspoon of baking powder
1 cup of mashed ripe bananas
1/2 cup of sour cream
2 teaspoons of vanilla extract
Preparing the cake:
Let the butter soften at room temperature.
Preheat the oven to 180°C and grease a 9 inch baking pan.
Place the butter and sugar in a deep bowl and using a blender, beat them together until they are light and fluffy.
Add the eggs, one by one, and blend well to get a fluid mix.
In a separate bowl, mix the dry ingredients.
Add them to the egg-butter mix, spoon by spoon, and keep on beating at a low to medium speed. There should be no lumps in the mix.
Now add the mashed bananas and sour cream along with the vanilla extract and beat the mix well.
Pour the batter in the greased baking pan.
Bake in the oven for 35-40 minutes.
While the cake is baking you can prepare the frosting:
Preparing the banana frosting:
Combine the egg whites and sugar and whisk them over a double boiler.
Remove from heat and mix some more until the mix cools and doubles in volume.
To this, add the butter and whisk until you get a smooth batter.
Add bananas and vanilla extract and whisk some more.
Add the food coloring (3 drops at a time) to get the perfect 'banana' coloring.
Preparing the chocolate frosting:
Combine the chocolate chips, caramel sauce, butter and sugar in a bowl.
Cook on low heat until the chocolate chips are melted.
Whisk the ingredients to let them mix well.
To prepare the cake:
Let the cake cool completely before frosting (you can put it in the fridge for a half hour to prevent it from crumbling).
Slice the cake in three layers.
Place the bottom layer on the cake stand and spread a generous amount of banana frosting over it.
Place the second layer on top of the frosting and spread the chocolate frosting over it. It's okay if it flows down the sides.
Place the top-most layer on top of the chocolate frosting and press lightly.
Spread the rest of the banana frosting on the cake and cover all the sides.
Cool in the fridge for about 2 hours to let the frosting set before serving.
Cut in slices and drizzle with chocolate sauce before serving.
